Crispy, gluten-free chicken nuggets

Description
A clean, gluten-free twist on a classic comfort food. These golden chicken nuggets are coated in seasoned ground almond flour and baked to crispy perfection — no breadcrumbs, no frying, no oil. Naturally low in carbs and packed with over 45g of protein per serving, they’re perfect for a quick lunch, post-workout meal, or healthy family favourite. Serve with roasted veg, salad, or enjoy them straight from the tray.
Ingredients (Serves 2):
1 large chicken breast (200g), cut into bite-sized chunks
4–5 tbsp ground almond flour (~32g)
½ tsp smoked paprika
½ tsp sweet paprika
½ tsp garlic powder
Sea salt & black pepper, to taste
Optional: pinch of cayenne pepper for extra heat
Instructions:
Preheat the oven to 220°C (200°C fan) / 430°F. Line a baking tray with parchment paper.
Cut the chicken breast into even-sized pieces for uniform cooking.
Mix the ground almond flour, smoked paprika, sweet paprika, garlic powder, salt, pepper, and optional cayenne in a shallow bowl.
Toss the chicken pieces in the dry mix until fully coated.
Arrange the nuggets on the tray in a single layer, spaced apart.
Bake for 15–18 minutes, flipping halfway, until golden and cooked through (juices should run clear).
Serve hot, with your choice of sides — or just enjoy as they are.
